Lunchtime Smoothie Recipe


I'll be honest. I get tired of chopping food up into tiny pieces for my fabulous 16-month-old to eat. This quick lunchtime smoothie minimizes my fruit chopping time. Yipee! You'll love it even if you don't have small kids.

Berry Awesome Smoothie
1 1/2 - 2 c. yogurt
1 ripe banana
1/2 c. or so berries
1 T. ground flaxseed or wheat germ

Mix with an immersion blender and you're done! Use whatever fruits you have on hand. If you don't have any berries available, try adding a tablespoon of jam instead.

Daffodils and sunshine

It's technically spring, but it's still awfully cold around here. Bursts of color and hints of spring inside are keeping me hopeful for those sunny days ahead!

Friendship Soup



I got this from a dear friend when we lived in England and attended New Testament Baptist Church. It feeds a crowd, so invite over some friends or bring a bowl over to someone who could use it (a sick friend, a co-worker who just had a baby, etc.)


Friendship Soup
1-1/2 lb. ground beef
9 c. water
1/2 c. split peas
1/2 c. lentils
1/2 c. brown rice
1/3 c. barley
6 cubes beef bouillon
1 med. onion, chopped
1 Tbs. Italian Seasoning
1 (46 oz) can V8
16 oz. bag of frozen corn

Brown hamburger in large pot; drain the grease. Add 9 c. water, split peas, lentils, brown rice, barley, bouillon, onion, Italian seasoning and V8. Bring to a boil. Turn down low (very light boil) and cook for 2 - 3 hours, stirring occasionally. Just before serving, add frozen corn and heat through.
